Ingredients

  • 500g strawberries
  • 60ml water
  • 100g Natvia
  • Juice of 1 lemon

Method

Serves 6

  1. Hull and roughly chop the strawberries, then place in a large saucepan with the water over medium heat
  2. Bring the mixture to a simmer and cook the strawberries until they have broken down well (about 5 minutes)
  3. Add the lemon juice and Natvia and stir well to dissolve the Natvia, then cook down until the mixture reaches a jam consistency (about 5 minutes)


Tips and Tricks

Water may be substituted with a liquer or wine of your choice - works well with a nice Riesling or rum

Use a large based saucepan as you do not want to stew the strawberries, they should only be about 1-inch deep in the pan
