Ingredients

  • 125g lowan rice flakes
  • 63g butter
  • ¼-⅓ cup Natvia
  • 3 tablespoon Natvia condensed milk
  • ¼ cup sultanas
  • ¼ teaspoon ground ginger
  • ¼ teaspoon vanilla essence

Icing

  • 1 cup Natvia Sugarless Icing Mixture, sifted
  • ¼ teaspoon ground ginger
  • 20g butter, softened
  • ½ tablespoon hot water
  • ¼ teaspoon vanilla essence
  • 50g glace cherries, chopped (if desired)
  • ¼ cup walnuts, roughly chopped (if desired)

Method

Makes 30

  1. Line an approximately 15x20cm slab pan (or use half a standard 30x 20) with baking paper.
  2. Melt butter, Natvia, Natvia condensed milk and vanilla in a saucepan over a medium-low heat.
  3. Add rice flakes, sultanas and ground ginger.
  4. Stir until well combined. Press mixture into prepared slab pan and refrigerate.
  5. Place Natvia icing and ginger into a bowl.
  6. Add butter, water and vanilla.
  7. Stir until well combined and a smooth icing forms. Spread onto slice.
  8. Sprinkle with cherries and walnuts.
  9. Refrigerate until set.
  10. Cut into small pieces and serve.


Tips and Tricks

  1. Lowan Rice Flakes: available at Coles in the healthfood aisle, these are wholegrain brown rice flakes: see pack for details. Also we have used Natvia Condensed milk instead of the others available in the market. The recipe for Natvia Condensed Milk is availble on this website.
