Ginger Licious Crispies

Ingredients
- 125g lowan rice flakes
- 63g butter
- ¼-⅓ cup Natvia
- 3 tablespoon Natvia condensed milk
- ¼ cup sultanas
- ¼ teaspoon ground ginger
- ¼ teaspoon vanilla essence
Icing
- 1 cup Natvia Sugarless Icing Mixture, sifted
- ¼ teaspoon ground ginger
- 20g butter, softened
- ½ tablespoon hot water
- ¼ teaspoon vanilla essence
- 50g glace cherries, chopped (if desired)
- ¼ cup walnuts, roughly chopped (if desired)
Method
Makes 30
- Line an approximately 15x20cm slab pan (or use half a standard 30x 20) with baking paper.
- Melt butter, Natvia, Natvia condensed milk and vanilla in a saucepan over a medium-low heat.
- Add rice flakes, sultanas and ground ginger.
- Stir until well combined. Press mixture into prepared slab pan and refrigerate.
- Place Natvia icing and ginger into a bowl.
- Add butter, water and vanilla.
- Stir until well combined and a smooth icing forms. Spread onto slice.
- Sprinkle with cherries and walnuts.
- Refrigerate until set.
- Cut into small pieces and serve.
Tips and Tricks
- Lowan Rice Flakes: available at Coles in the healthfood aisle, these are wholegrain brown rice flakes: see pack for details. Also we have used Natvia Condensed milk instead of the others available in the market. The recipe for Natvia Condensed Milk is availble on this website.
